I started cooking since I was little; helping my Sicilian grandmother in the kitchen making classic dishes such as cannoli, caponata, and parmigiana. My cultural background can be traced back to my work as a chef, but I also like to use Asian inspired techniques. I fell in love with Japanese cuisine after my travels to Tokyo. Our bar has 22 beers on tap, including two nitro taps, with a focus on showcasing a wide variety and balance of styles sourced from Europe, the US and Canada. We have done everything at the bar - laid the bricks, built the draft system, painted the furniture, sourced the beers, cleaned the bathrooms, bartended, etc. Now we have an excellent FOH team and need to spend less time actively bartending, so we're focusing more on sourcing and relationships.

I don’t have any backgrounds about food or bakery in term of education, but because I am a food lover and backpacker i guess :D I love cooking and baking and also passionate about organic and sustainable ways of living plus traveling, so I combined those three together and create my own unique bakery, learning by doing, learning by experiencing where the world is my classroom and local people between my journeys are my teachers. :) I started my own business since 2015 where I do everything on my own. Using my small business on Instagram platform to share my experiences of traveling, volunteering, doing eco- projects or CSR projects are always the things I am happy and have been doing for 7 years, to share happiness, to help out those in need or to inspire more people that they could do things differently to our mother nature because I believe every small hand and help does matter :)
